Microsoft continues to develop Power Query in Excel for Microsoft 365.

It is now available in Microsoft 365 for Mac. The Mac version supports fewer sources but uses a more modern interface. More information: Import and shape data in Excel for Mac (Power Query) - Microsoft Support.
